Lemon Dill Potato Salad

Ingredients
  • 3lbs red potatoes
  • 2 tbsp. vanstone-fresh-logo-45w dill
  • 2 tbsp. vanstone-fresh-logo-45w chives
  • ½ cup sour cream
  • 1-2 cups mayonnaise
  • 2-4 tbsp. fresh lemon juice
  • 2 tsp. salt
  • 1 tsp. pepper

Preparation

Cook new baby potatoes whole or halve medium potatoes in cool, salted water. Boil 15- 20 minutes, or until just tender. Strain and place in cool water. Once cooled, cut into bite sized cubes. Add fresh dill, fresh chives, salt, pepper, sour cream and 1 cup mayonnaise, add more as needed. Drizzle with lemon juice. Chill. Serve cold.[/vc_column_text][/vc_column][/vc_row]
