- 3 cups basil
- 1/2 cup olive oil
- 1/4 cup almonds or walnuts
- 1/3 cup parmesan
- 1 large garlic clove (or 2 small)
- Salt and pepper to taste
In a saucepan put about an inch of water and bring the water until almost boiling (don’t let the water to boil), in medium heat.
Wash the basil and cook it in the water for about 10 seconds and then wash it again with cold water. Don’t let the basil turn brown.
Toast the almonds or walnuts in a saucepan or in the oven until they turn slightly brown.
Put all the ingredients in the blender.
PD: you can substitute part of the oil (up to 1/4 of the amount of oil) for warm water to make it healthier.
