Simple Quinoa Salad

  • 1/2 cup quinoa
  • 1 cup water
  • 2 tsp. salt
  • 1 can black beans
  • 1/2 cup corn
  • 1 cup cherry tomatoes (halved) (you can use Rapunzel, Orange Zinger, Terenzo or Fantastico)
  • 1/3 cup vanstone-fresh-logo-45w parsley
  • 1/3 cup vanstone-fresh-logo-45w basil

Bring quinoa and water to a boil, cover and turn down to a simmer for 15 mins. Combine remaining ingredients in a bowl. Add salt to cooked quinoa and add to salad. Chill 1 hour. Serve cold.

* top with hot bbq chicken breast for a complete summer meal.
